It's funny how I am such a hummus fiend, but I've only ever posted 3 hummus recipes on the blog. It's rather sad! I always think a certain hummus recipe is on the blog, but then I go to look and realize it still isn't published, but sitting in the "recipe cue". So I feel the need to slowly remedy that, starting with some carrot goodness! We all love carrots right now, right? I know I do; I'm obsessed!

Hummus is great for dipping things like carrots. You can dip your big 'ole carrots right in the carrot hummus, maybe some celery, cucumber. But, my favorite, you can spread it. You can spread it on a BAGEL! Right? I've said it before, but one of my main lunch choices is a hummus and veggie sandwich. I usually you corn tortillas, but I'm thinking a bagel wouldn't be too bad of an option either!

It's just the perfect savory spread when I don't want a nut butter and jam sandwich. It's filling and plant-powered-protein-packed. Hummus is the all-purpose "condiment" to always have in your kitchen. The other week I made a MASSIVE batch, 2 types, of hummus. I keep it out in the fridge for a week and then what isn't used gets frozen in little plastic baggies or individual portions. I am now stocked on hummus for about a month though! I'm not complaining though, it's such a relief to know I just have to pop it out of the bag, into a bowl, and microwave. Yes! Warmed hummus is so delicious! I like it warm much better than cold! Give it a try!

Ingredients

Scale
  • 3 Cups Cooked Chickpeas (1 Cup dried, cooked)
  • ½ Cup Carrot Puree (I used this)
  • ¼ Cup Chopped Fresh Parsley
  • 2 Chopped Fresh Basil Leaves
  • 1 Tsp Dried Tarragon
  • 1-2 Tsp Sriracha
  • ½ Tsp Minced Garlic
  • ½ Tsp Onion Powder
  • Zest of 1 Lemon
  • ½ TB Lemon Juice
  • ¼ Tsp Cumin
  • 3-4 TB Water (as needed)

Instructions

  1. In a large food processor, combine all ingredients and blend until smooth!

Hummus is probably the easiest food to meal-prep (if that's your thing!) I feel like it's a "month-prep" task for me, but I'm only making it for one person and the batches I make are huge...so it lasts! Throwing a bunch of beans, veggies, and spices into the processor and pressing a button, couldn't be easier! So cooks and non-cooks alike, everyone can make hummus! Woohoo!

    I really love hummus too. But I have to admit to my deep dark secret, I've never made it myself. I had no idea that it was this easy, I'm really good at pushing buttons. So this is definitely going on my must make list, especially for summer as we eat tons of fresh vegetables. I personally like a roasted garlic hummus but I am willing to nibble on any hummus available.

    Thanks Rebecca for this recipe for spicy garden carrot hummus. I make hummus all the time, and prefer mine in small batches. I usually make spicy hummus (with secret ingredients) that I may disclose in a future blog. Haven't thought to use carrots, but may try this out to see whether it tempts my taste buds.

    Hummus was a staple in my house growing up, my dad would eat it by the container with a spoon! Mostly the garlic, lol 🙂 I was never quite as big of a fan but the spicy ones always had my heart. I'd love to try this with the carrots - yum!

    I love hummus, but get so tired of the "regular" versions. Adding carrots is a perfect way to amp up the flavor and yet still have a recognizable hummus quality to the dip. Can't wait to try this.

    Love carrots and the cumin in this...looks and sounds amazing and I bet has a wonderful deep, slightly smoky flavor. Cumin is one of my favorite spices and I LOVE hummus!!

    Hummus is such a great addition to SO many things. I toss it on salads, spread it on sandwiches, dip stuff in it (duh), and bake chicken coated in it. Also, from experience, it's great on bagel sandwiches 😉
