I had a can of Libby's 100% Pure Pumpkin Puree in the pantry for a while now and thought I would open in and come up with something to make. I had bought it back when I was eating oats and was going to make overnight pumpkin oats...but that never happened. So, why not try it with warm delicious quinoa flakes? That I did. It was absolutely the best thing I have eaten for breakfast in a very long time. I ate it three days in a row now and just bought another can of pumpkin so I can make it again...and again...and again. Now some of you seasonal flavor traditionalists are probably like, "You still have a few more weeks until Fall. Pumpkin Pie flavors are not for Summer!" But I would never let that notion stop me. I will eat the flavors of Fall in the Summer, same for Winter and Spring. I don't discriminate and limit pleasures to my palate.

I have another great dish to share; one I devised over the weekend and absolutely loved. Lentil Veggie Tacos! I had a craving for tacos last week so I just threw together a bunch of ingredients and poof, magic happened. This makes enough for about 6 small tacos (3 servings), but you can always increase the amounts if you want to make it for your family. Vegan, Gluten-Free, Soy-Free, and Nut and Seed-Free. Perfect for all my allergy friends!

So tell me:
+ Are you a flavor traditionalist who will only eat Pumpkin things in the fall and winter and say lemonade in the summer?
+ Do you like your tacos hot and spicy or more relaxed? I actually like them not so spicy and the corn tortillas I used gave the tacos a nice sweetness.

I'm not really a traditionalist when it comes to food - but that may be because the only foods I can eat are available year round haha

Thanks! I do try to eat seasonally with some produce though since I know it's better for the environment.
