You know what makes me happy? Fun, colorful, healthy foods! There are many reasons why I named this blog with the word "sunshine", but one of those reasons is for all the happy color-inducing thoughts it brings. Maybe it is just a subconscious goal of mine to get as many colors into my diet each and every day. I'm pretty sure I knock them all out of the park without any struggle, especially GREEN!

I like to tell people I may just be the first to overdose on greens (but that's okay!). I proudly do crave veggies (I also crave nut butter and sweet cereal, but you know how it is!) But hold up now! Don't think the only way you can add green to you diet is from veggies! You may want to delve into some Matcha (green tea powder)  and Spirulina (blue-green algae)! Two fantastic "superfoods" that load in the antioxidants just like veggies and fruit! However, this little powers are much better when we add them to something like...ICE CREAM!

Are you shocked even more? Yes, I said ICE CREAM! My first ice cream recipe to boot! To make it even more special and "super" I made this ice cream not with plain old coconut milk, but Silk® Nutchello™ Toasted Coconut and Cashew Beverage (2 of my favorite foods)! It's cocoNUTTY, creamy, deliciousness! I always say cashews are like candy to me, with their natural sweetness. Add coconut as well and you have one decadent dairy-free milk for the ultimate ice cream creation! It gets better! The other base is bananas so you don't need an ice cream maker nor any freezer time. You can dive right into this dairy-free vegan decadence!

Since I know not everyone has my taste preferences, I am hoping that this green goodness will make everyone happy. How could anyone pass up this sweet, healthy, summer-ready treat? You could eat this for breakfast, dessert, even perhaps a midday boost? Can we get a "heck yea!" for the coconut and cashew too? Those are also some of my happiest foods. They're not all that colorful on their own , but that doesn't stop us from giving them extra side kicks to boost the color-power!

Ingredients

Scale
  • 3 Cups Chopped Frozen Bananas (about 4 small bananas)
  • ¾ Cup Silk® Nutchello™ Toasted Coconut Cashew Beverage*
  • ⅓ Cup Unsweetened Shredded Coconut (plus more for topping)
  • 2 Tsp Matcha
  • 1 Tsp Spirulina

Instructions

  1. Toss all ingredients in a large food processor or blender.
  2. Blend until smooth,thick, and creamy!
  3. Makes enough for 2 bowls and top with some extra shredded coconut!

Notes

*This has been discontinued since this post was written. Please use your favorite full fat coconut milk beverage (not canned coconut).

    I've seen so many good things about macha, I need to try it. And hiding it in this ice cream seems a great way for me to introduce it to my family. Nutchello is also new to me. I will be looking for this! I would be great in a whole lot of foods, especially this ice cream and in a trifle! So excited!

    I would love to try this!

    When Lynne and I did our Vegan January, we could only get Vegan vanilla ice cream from the shops. I never thought of making a vegan ice cream. But then again this recipe wasn't available then. 😉

    Oh, the flavor combinations going on here sound incredible!!!! And that color is perfect! Toasted coconut + cashew milk sounds heavenly - I LOVE toasted coconut or really anything coconut-y!     I'm not a big fan of the taste of match (can't stand matcha lattes) but I love adding it to desserts and smoothies where I can mask the taste with other flavours because matcha just has so many health benefits! I bet this ice cream tastes amazing with the banana, coconut and cashew flavours 😀
