Everyone loves that classic crispy sweet rice bar! Homemade Gluten-Free Rice Krispie Treats that are allergy-free, sugar-free, and vegan! Kids and moms will love this easy 2-ingredient no-bake recipe for the classic childhood snack!
Raise your hand if you loved opening up your lunchbox and finding one of those lovely blue cellophane/foil wrapped rectangles waiting for you. I know I did! Those Rice Krispie Treats tasted so good! (I loved when they were cold and slightly frozen from the ice packs!) Sweet, (overly sweet), Rice Krispies stuck together with marshmallow magic. They looked innocently healthy enough to be passed off as a "sweet snack", but we all know they were 100% sugar-filled dessert! (I would lick the excess stickiness off the wrapper; just like those ice cream bars!)
A celiac can't have Rice Krispies as they contain barley malt (the "gluten-free Rice Krispies" were discounted...they were terrible anyway!) Then there is the whole marshmallow problem which I solved. Vegan marshmallows contain soy, and non-vegan marshmallows have gelatin...we can't win! Plus, you know that if I can make something sugar-free, I will! I think you can already tell that this third "back-to-school" remake is going to be a deceivingly healthy and allergy-free one!
It may be just me, but isn't it funny that a cereal brand, also makes a dessert? Although, it's known that American breakfasts usually are desserts in disguise. Better yet, there is a legitimate Rice Krispie Treat cereal! Not just Rice Krispies, but sweet treat cereal! I'm honestly kind of sad that I never got to try that cereal! I'll assume I would have loved some sweet Rice Krispie clusters for breakfast! I was never big on regular Rice Krispies (they got soggy so fast!), but I was a fan of Cocoa Krispies! I mean, it's chocolate, so that seems obvious!
Now, I know making Rice Krispie Treats at home has been a longtime American tradition; akin to making homemade chocolate chip cookies. Just another right-of-passage childhood activity, yet, I never made them! The one childhood activity my mom failed me on...Rice Krispie Treats! It's okay mom, I forgive you, you bought them instead 😉 But if you do want to make these cereal bars with the kiddos, 1 for tradition, 2 because they have celiac disease/food allergies, or 3 you want to give them something healthier, than making these are for you! Some crispy rice cereal with my homemade marshmallow fluff, you won't be missing that blue wrapper anymore!

Instructions
- In an large mixing bowl, combine the crispy brown rice cereal and 2 cups of marshmallow fluff.
- Mix together and then press the mixture flat into a plastic wrap lined 8x8 baking pan.
- Allow it to set in the fridge for 1-2 hours before cutting into 9 squares!

So I guess these are 2-ingredient no-bake bars too! I know you'll have to get out the majestic beauty and whip up a batch of the marshmallow fluff though, so a bit more than just "2-ingredients"!
