Gluten-Free Pumpkin Spice Rice Krispie Treats (Vegan, Allergy-Free)

Pumpkin Spice Rice Krispie Treats! Crisp, soft, and chewy, these easy gluten-free, vegan, and allergy-free Rice Krispie treats are perfect for fall or Halloween! No marshmallows needed, nut-free, loaded with real pumpkin, and topped with a dairy-free white chocolate drizzle! A lower-sugar recipe that's an ideal kid-friendly dessert or sweet snack!

Classic Rice Krispie Treats...but make them PUMPKIN! A seasonal treat that's just as fun to make as it is to eat! What kid (or adult) doesn't love a homemade Rice Krispie treat? This recipe is ideal to make when you have some extra pumpkin puree on hand, cereal that's about to go stale, and the need for an at-home fall activity to do with the family!

After MANY, many, trials with the recipe, I finally got the formula down for you! No need for marshmallows (gelatin or soy) or nut butters for these. I didn't use marshmallow fluff, like last time, either. These are not sugar-free, but they are lower in sugar than your typical Rice Krispie treat recipe! However, they are:

  • Gluten-Free
  • Vegan
  • Allergy-free (Dairy-Free, Soy-Free, Egg-Free, Nut-Free, Peanut-Free, Wheat-Free, Sesame-Free, Corn-Free, Coconut-Free)
  • Made Without Marshmallows
  • Gelatin-Free
  • Kid-Friendly

Ingredients You Need

  • Gluten-Free Crispy Rice Cereal: Aldi's Crisp Rice cereal is gluten-free, as well as Walmart's Great Value Rice Crispies. You can also use Malt-O-Meal, Barbara's Brown Rice Crisps, One Degree Organics, or Nature's Path. You want a CRISP rice cereal, not puffed.
  • Brown Rice Syrup: You may think maple syrup would be amazing, but DO NOT use maple syrup. It is NOT thick and sticky enough for these treats. They will fall apart.
  • Pure Pumpkin Puree
  • Vegan/Allergy-Free Butter
  • Pumpkin Pie Spice
  • Allergy-Free White Chocolate: Optional, but...not really.

Making Rice Krispie Treats without Marshmallows or Nut Butter

To make the sticky mixture that will hold your treats together, you simply need to heat and boil the brown rice syrup, butter, pumpkin, and spices on the stove for just a few minutes. Once it gets bubbly and thickens, you'll be ready to add it to your gluten-free rice cereal!

Next, mix together the hot syrup and rice cereal until everything is fully coated. This is where you can get the kids involved and dive in with (clean) hands to get everything mixed and ready before pressing the mixture into the pan!

Line an 8x8 square baking pan with wax or parchment paper and press in the coated rice cereal until it's compact, level, and smoothed out on the top! You'll need to let the treat set and firm up in the fridge for at least an hour before the final step!

Decorate Your Rice Krispie Treats

Once your pumpkin spice Rice Krispie treats have had time to firm up in the fridge, you can remove the pan and cut the treats into 9 square bars (if using an 8x8 pan). Then you can melt about ½ cup of allergy-free white chocolate to drizzle over the bars.

Melt the chocolate in the microwave at 30-second intervals, stirring between, until melted. Then just take a spoon, dip it in the melted chocolate, and "swing" it over the bars (the messier the better!)

Place the bars back in the fridge to let the chocolate set before eating!

Tips For Making Homemade Rice Krispie Treats

  • I let my bars firm up overnight in the fridge. The colder they are, the better when cutting them. They should NOT be warm when you go to cut them.
  • Use a very sharp knife to cut the bars, directing in the pan. Cut the bars BEFORE drizzling with chocolate.
  • Lining the pan with parchment paper (or wax paper) allows you to lift the bars out with ease and no mess.
  • Keep the bars refrigerated until you are ready to serve and eat them. If they get too warm for too long, they will begin to fall apart. This is because you are not using marshmallows, nut butter, or a ton of sticky sweetener.
  • Store in the fridge in an airtight container for up to 10 days. To freeze the bars, you can wrap them individually in wax paper, then place them in a storage bag or container, and freeze for up to 3 months for best quality. To defrost, allow them to naturally thaw overnight in the fridge.

Ingredients

Scale
  • 4 Cups Gluten-Free Crispy Rice Cereal
  • ⅓ Cup + 2 TB Brown Rice Syrup
  • 2 TB Pure Pumpkin Puree
  • 2 TB Vegan/Allergy-Free Butter
  • 1 ½ Tsp Pumpkin Pie Spice*
  • ½ Cup Allergy-Free White Chocolate Chips (optional, to top)

Instructions

  1. In a small pot, heat the brown rice syrup, pumpkin, butter, and spices over low heat for about 5 minutes, until the mixture thickens a bit and begins to bubble.
  2. Add your rice cereal to a large bowl.
  3. Add the hot syrup mixture directly to the rice cereal and gently mix and coat the cereal with a large spoon. You can use your hands once the mixture isn't boiling hot.
  4. Line an 8x8 Square Baking Pan with parchment paper or wax paper.
  5. Add the coated cereal to the lined pan and press the cereal down with the back of a large spoon or spatula until the top is even. If the mixture sticks too much to the spoon, grease it with some extra butter.
  6. Now allow the treats to firm up in the fridge for at least an hour.
  7. Remove the bars and cut them into 9 squares (or any shape you want).
  8. Melt the white chocolate in the microwave with 30-second intervals until melted. Take a small spoon, dip it in the melted chocolate, and drizzle it over the cut bars.
  9. All the chocolate to set (this should be rather quick), a few minutes in the fridge before serving your bars or storing longer term!

Notes

*You can also add your own individual ground cinnamon, nutmeg, ginger, and cloves or allspice to taste.

    Some might call me crazy, but I think these sound better than "regular" krispie treats! I'm not typically a fan of "pumpkin spice" treats because most of them don't even have pumpkin in them, but this sounds delicious. I love pumpkin puree baked goods, so adding that to these treats is probably amazing! I just made snickerdoodle krispie treats this past weekend... these might have to be my next sweet snack!

    OMG these sound amazing! I've been looking for vegan krispy treat recipes, marshmallow based treats are the one thing I miss! I will need to investigate if I can get the syrup here in the UK, thanks for sharing and raising awareness!

      Brown rice syrup is a pretty standard food. You can use golden syrup, which I know you have in the UK!
