Happy Wednesday! One week until Christmas! I feel like it is coming too fast now! Once it's over, things tend to get pretty sad and drab again. So let's savor these anticipation days. I do know I love Christmas Eve more than actual Christmas day and that's only 6 days away, ah!
I have so many quinoa flake recipes to share with you and have been totally slacking with posting them quick enough. So you won't just be getting one new recipe today, but two! I am pretty sure I haven't had the same variation of quinoa flakes in weeks. It is so easy to just think up a new flavor combo and it keeps things exciting. The two I am sharing today are kind of festive if you will. We have Chocolate Peppermint and Apple Cinnamon. Both remind me of the holidays and the wonderful smells and spices that go with them.
The Chocolate Peppermint recipe is my favorite. I used real peppermint tea and pure peppermint extract! It was awesome and I love the clean fresh feeling peppermint gives you. Your throat gets cool and your feel like you are breathing cold fresh air. Haha, I guess it would be good if you are feeling stuffy and under the weather. Perfect for those winter colds 😉

The next variation I have is Apple Cinnamon. This one is super simple and uses my favorite fruit. APPLES! I have never known someone who does not like apples. They may not like every kind, but they always have some favorite, even if it is only one type.

+ Do you like peppermint? Even though your would think it would be bad for someone with stomach problems, there are countless articles giving it total praise for taking care of the tummy 🙂 Perfect excuse for me to drink peppermint tea all the time!

Just saying that YOU are the Quinoa Flake queen! I am yet to try it- is it similar to oatmeal?
I tried eating beans again the other day...no dice. It hurted me :p

Haha! The consistancy is similar kinda to oatmeal I guess you can say but it tastes like quinoa haha! But you need you try it ASAP.
Did you try sprouting lentils? Just sprout some good old brown or green lentils for a few days (3ish) after the initial soak. Then even just put them in a normal dish you cook but they will be sprouted. Proceed to cook them as usually in the dish and your stomach should be okay 😉

Ooh chocolate and peppermint is always the best combination - and I'm a peppermint lover through and through, peppermint tea, peppermints, candy canes you name it!
At the moment I'm kind of obsessed with our buckwheat gingerbread pancake recipe!
