I think I may have found the perfect appetizer. Easy, delicious, healthy, crispy, so flavorful, and dippable! Appetizers can be so boring, but they need to make an impact! They're your first impression and whether you need to wow your guests or kick-off dinner with a bang, this recipe is for you! Crispy breaded air-fried artichokes? Yes, please!

What artichokes to use

You don't need big uncooked fresh artichokes. No, no. This is an easy appetizer recipe! You'll need 2 cans of whole artichoke hearts in water or brine (not marinated). You'll want to slice the artichoke hearts in half, lengthwise, so you get two for the price of one (heart). Then let the brine drain from them on paper towels so they're not too wet before breading. You can kind of press down on them to release excess brine that's caught in the folds.

prepping artichoke hearts for breading

How to bread the artichoke hearts

Don't worry, it's super easy and of course, egg-free! The magic to getting your breading to stick is a simple slurry of dijon mustard and non-dairy milk! Not only does the dijon bring so much flavor to the table, it creates the perfect "eggy" stickiness you need for the gluten-free breadcrumbs!

You can use any plain gluten-free breadcrumbs you'd like for this, but you'll be adding some dried parsley, onion powder, garlic powder, and black pepper to the crumbs for a simple flavoring.

  1. First, you'll mix together the dijon and non-dairy milk in one bowl.
  2. Then mix together the breadcrumbs and seasonings in another bowl.
  3. Have your artichoke hearts sliced in half and patted dry on a separate plate.
  4. Dip each artichoke half in the mustard mixture, then coat in the breadcrumbs, then transfer to the basket of your air fryer.
  5. Depending on the size of your air fryer, you'll need to do these in batches to prevent overcrowding.

How long to air fry

I did around 2 batches and each time you'll set you air fryer to 370°F and air fry your batch of breaded artichoke hearts for 5 minutes, flip them over, and air fry for another 5 minutes. You want them slightly golden brown and super crispy!

Can you bake them?

If you don't have an air fryer (which means you need to get one ASAP!), I assume baking these will work just as well. I have not tested them in the oven, but assuming you bread them the same way, place them on a baking sheet to roast and crisp up at 400°F for 10 minutes, flip, and roast another 5-10 minutes until they look golden brown and crisp, you should get decent results!

What to dip your crispy air fryer artichokes in

I whipped up a super quick dairy-free yogurt dip! Something cool and creamy works perfectly with the savory, lightly seasoned artichokes. This yogurt dip includes lemon juice and dill. You can use any dip you'd like, from hummus to a plain yogurt...maybe even ketchup!

An easy and healthy appetizer

No need to get crazy with whole stuffed artichoke hearts. This simple appetizer recipe is basically everything delicious about stuffed artichokes...without any of the work! You still get a delicious breaded, that umami artichoke taste, the soft inner artichoke layers, and nice crispiness to the outer bite! Plus, these little artichoke bites are super healthy and blow any boring vegetable appetizer (like celery and dip) out of the park! They're:

  • Gluten-Free
  • Vegan and Vegetarian
  • Allergy-free (Dairy-Free, Soy-Free, Egg-Free, Nut-Free, Peanut-Free, Wheat-Free, Sesame-Free, Corn-Free, Coconut-Free)
  • Oil-Free
  • Sugar-Free

Are artichokes a vegetable?

This is a hot topic, just like a tomato is a fruit, not a veggie. However, artichokes are considered vegetables, but if you classify them by their botanic origin, they're a flower. So, you're really eating crispy breaded flowers. Artichokes are so hearty and have the smooth buttery center heart, they're really good for digestion (prebiotics!), full of vitamins and minerals, and should have a place in your "veggie" rotation!

  • Category: Appetizer
  • Method: Air Fry
  • Cuisine: American

Ingredients

Scale

For the Artichokes:

  • 2 (14oz) Cans of Whole Artichoke Hearts in Brine*
  • 2 TB Dijon Mustard
  • ¼ Cup Unsweetened Non-Dairy Milk
  • 1 Cup Plain Gluten-Free Breadcrumbs
  • 2 Tsp Dried Parsley
  • 1 Tsp Onion Powder
  • 1 Tsp Garlic Powder
  • ½ Tsp Black Pepper

For the Yogurt Dip:

  • 1 (5.3oz) Container of Unsweetened Non-Dairy Yogurt
  • 1 Tsp Lemon Juice
  • Chopped Fresh (or Dried) Dill (to taste)

Instructions

  1. Open your cans of artichokes and drain the liquid. Cut each artichoke heart in half, lengthwise, and place them cut-side down on a paper towel to dry. You can press more liquid out by using another towel on top and pressing down slightly on the hearts.
  2. In a small bowl, mix together the dijon mustard and non-dairy milk.
  3. In another bowl, mix together the breadcrumbs, parsley, onion powder, garlic powder, and pepper.
  4. Prepare to bread your artichoke hearts by placing the two bowls, plate of artichokes, and air fryer basket in an assembly line.
  5. Take a drained artichoke heart half and dip it in the dijon milk, then toss in the breadcrumbs, and then place it in the air fryer basket. Repeat until your air fryer basket in full (not overcrowded).
  6. Air fry the breaded artichokes at 370°F for 5 minutes, flip each artichoke half over and air fry for another 5 minutes until golden brown. Repeat this cooking process until you've completed all the artichoke hearts you have.
  7. To make the yogurt, simply mix together all ingredients, using spices and herbs to taste.

Notes

*These standard cans usually contain 5-7 hearts. You want about 20 halves by the end of this recipe, i.e. 2 cans worth of whole artichoke hearts.

**To Bake: Place the breaded artichoke hearts on a lined baking sheet to roast and crisp up at 400°F for 10 minutes, flip, and roast another 5-10 minutes until they look golden brown and crisp.

Do we have to use non-dairy milk? Our family drinks organic whole milk (grass fed). Can I use that? ... Thanks for this SUPER-YUMMY recipe!

Celiac Disease is NOT a food allergy 🚫🍞 So Celiac Disease is NOT a food allergy 🚫🍞

So many people still confuse the two, but it’s an autoimmune disease, not an allergy. That means gluten doesn’t cause an immediate allergic reaction resulting in hives or swelling…it causes your immune system to attack your small intestine longterm.

This distinction matters because:
👉 There’s no medication or quick fix
👉 The only treatment is a strict, lifelong gluten-free diet
👉 Mislabeling it as an “allergy” is scientifically incorrect. There is no such thing as a gluten allergy.

Swipe through to learn why the distinction is inportant and why accurate education and awareness is paramount. Let’s set the record straight and not mislabel our disease when speaking about it. 💛
