A sweet little no-bake snack bite that’s great for school, work, and on the go! These Apple Cashew Snack Bites are gluten-free, vegan, made right in a food processor, and freezer-friendly! A make-ahead recipe to always keep on hand!
I haven’t shared a snack bite recipe is a long time! With it being “Fall-Flavored” season and back to school season, these easy apple cashew snack bites seemed like a must to finally bring on the blog. When I think of easy, no-bake snack, bites (or balls) are always the first thing to come to mind! They are delicious no matter what combo you throw in the food processor and taste like pure heaven when you eat them straight from the freezer!

I only brought two big appliances down to school with me and that includes my food processor and a toaster oven. We have a full kitchen in the apartment and a lot more room than I thought. I think I’ll be asking for my waffle maker and THE PAN to be sent down (I miss them!) We even have a dishwasher (which has not been used). Regardless, snack bites are perfect for any college student. You just need a food processor (or blender) to make them. Keep them in the fridge or freezer and you’ll be a happy camper!
Whoever had the idea to blend up a bunch of power-packed ingredients and then roll them into balls…was a genius! I find them rather comforting to eat too. That might have to do with the fact that these specific bites use 2 of my favorite foods, but I find these rather blissful as well! Apples and cashews, both sweet, delicious, healthy, and my definition of happiness! Talk about eating an apple with some Trader Joe’s cashew butter…DESSERT! I may be the odd man out, but I love having that as my pre-bed snack (i.e. dessert)!
But if I want this lovely combo during the day or after a workout, well, in portable snack bite form comes in a close second to the real deal! If every college student (okay, anyone who needs an easy snack!) ate snack bites, there’d be a lot more productivity, less stress, and smiles 😉 Can a delicious healthy snack bite change the world? Maybe! But why don’t be see and find out!
Apple Cashew Snack Bites
- 2 Cups Gluten-Free Rolled Oats
- 1 Cup (2 Packs) Freeze-Dried Apples
- ¼ Cup Cashew Butter
- ¼ Cup Unsalted Raw Cashews
- 2 TB Plain Stevia Syrup*
- 1 Tsp Cinnamon
- ½ Tsp Pure Madagascar Bourbon Vanilla Extract
- 3-4 TB Water (as needed to blend and make sticky)
- In a large food processor or blender, add all the ingredients, except ½ cup of the rolled oats, and blend until you get a nice sticky mixture.
- Add the last ½ cup of oats and pulse a few more times to incorporate them (I do this so I have some larger pieces of oats in the bites).
- Scoop out the mixture and roll 10 balls with your hands.
- Store in the fridge or freezer!
So, if you don’t stock your freezer with some bites (you could even make these, these, or these!), you’re just going to have a stressful year! I do think these may change the world or at least change those busy days we all have into not-so-busy days! You won’t have any hangriness to worry about, that’s for sure! I know we all could use some smiles and apple cashew snack bites without the stress of worrying about food!

I just tried making snack bites with another recipe using peanut butter and found the peanut butter overpowering. Do you think the cashews will be more mild in flavor?

Oh I love snack bites! I’m always looking for a good way to enjoy a post-workout snack. I really like that you added cashews & cashew butter as I think it would give a good flavour and help with texture. Yes, whoever thought of blending and rolling things into a ball was definitely a genius!

Obviously I should have been hanging out with you in College. You place a much higher emphasis on good food. I, on the other hand was tired and definitely gained the Freshman 15. I had a bag of potatoes and a tub of sour cream, I cooked the potatoes in the microwave for a quick meal as I was running from class and to two different jobs. These snack bites would have definitely made a huge difference. Packed full of goodness and great flavor, I could have grabbed them for on the go. And I’m sure it would have helped with my energy level. I love snack bites and these sound absolutely delicious.
But girl , potatoes in the microwave is my life! At home and away!

These look amazing– love me some cashews. I always bring Larabars on flights, and Xander was eating them all on our recent trip! So I need to start making him homemade versions. Do you think these would stick together well if I threw in a few dates rather than the syrup? I can’t have stevia, and prefer not to give him any sugar yet.
That’s up to you. I’ve actually never cooked with dates so I can’t tell you that, but they are so high in sugar and calories :/

These are absolutely perfect for my sons lunch. He loves apples, so these would be great for him. I have some freeze-dried apples in my pantry, so it looks like I’m giving these a whirl tonight.

I have to admit that I’m a big fan of peanut butter! I really like other nut butters (nutters? LOL!) but peanut is definitely my favourite. As to the other part of the question; pumpkin… mainly because it’s so versatile. Can’t really make apple curries – well, you could but I don’t think they’d work very well!
Regarding go-to college snacks (we’re talking university, right?) – a tub of salad usually. But… I was 39 when I went to uni!

in college – i snacked a lot on laughing cow and crackers, trail mix (with lots of m & m’s), and oreos, these were my go to. i lived in the dorm and didnt really cook. i wish i had known or paid attention more to dorm-style snacks/meal prep etc. i am loving all the fall-ish recipes popping everywhere.
