Chocolate chips, pumpkin, mini muffins, a combo made in food heaven! These chocolate chip pumpkin muffins are basically the seasonal iteration of the classic chocolate chip muffin, just with pumpkin and in tiny bite-sized form! Not to mention these mini muffins are gluten-free, vegan, top 8 allergy-free, and pretty darn healthy! Since they're mini, these muffins are just perfect for little hands and/or satisfying that afternoon sweet tooth with just a "bite"!
When it comes to baked goods, adding chocolate chips is always a viable option. Better yet, adding MINI chocolate chips is even better! So you, you can enjoy these chocolate chip pumpkin muffin bites for a quick on-the-go breakfast, an after school sweet snack, of a delicious delight after dinner!
Another great thing about these mini muffins is that they're school-safe too! Perfect for any Halloween or fall-related classroom parties that may come up. Everyone will be able to enjoy a mini muffin bite (or two!). Pop a few in your child's lunchbox too and they'll be in for a wonderful sweet surprise when they open that box up! Even when you have food allergies, celiac disease, etc. you should be able to celebrate the Great American Pumpkin Season with delectable treats like this!
Can these muffin bites be made ahead of time?
Yes! Just mix up the ingredients, bake the mini muffins, and then set them aside to completely cool on a wire rack. Then you can pop them in the freezer or just store in an air-tight container for 5-7 days. You can heat them in a toaster oven or the microwave if they're frozen (a warm melty chocolate chip pumpkin muffin, anyone?). This recipe makes a BIG batch of muffin bites so you'll probably want to freeze some if you're not making them for a party or gathering!

They're perfect to have on hand this season so as not to feel left out by all the seasonal pumpkin goodies that bombard the stores! Mini Gluten-Free Chocolate Chip Pumpkin Muffin Bites (Vegan, Allergy-Free)

Ingredients
- 2 Cups Gluten-Free Baking Flour
- 1 Tsp Baking Powder
- ¾ Cup Pure Pumpkin Puree
- ½ Cup Erythritol (or preferred granulated sweetener)
- 1 Tsp Cinnamon*
- ½ Tsp Ground Ginger
- ½ Tsp Ground Cloves
- ¼ Tsp Ground Nutmeg
- ½ Cup + 2 TB Unsweetened Non-Dairy Milk
- ½ Tsp Pure Madagascar Bourbon Vanilla Extract
- ½ Cup Enjoy Life Mini Chocolate Chips
Instructions
- Preheat the oven to 375°F.
- In a large mixing bowl, combine all the dry ingredients (except the chocolate chips) and mix together.
- Now add the milk and vanilla, mix to form a smooth batter.
- Lastly, add the mini chocolate chips, folding them into the muffin batter.
- Fill a greased 24 cup mini muffin tin with about 1 heaping tablespoon of muffin batter to each cup (you'll have some leftover batter for a few more muffins).
- Bake the muffins in the preheated oven for 10-12 minutes.
- Remove and let cool for a few minutes before transferring to a wire rack to cool completely.

*Alternatively to the 4 spices, you can use 2 teaspoons of a pumpkin pie spice.
