They’re a surprisingly healthy breakfast recipe that kids (of all ages!) will love! Perfect for little hands to dunk in syrup and munch!
Shut the front door! I am in love! The pancake game just got taken to a whole new level in every way possible. I didn’t know it was possible to love pancakes more, but I guess it is! Pancakes aren’t something you’d typically eat with your hands. I mean, I guess you could, but that would be kind of weird and socially looked down upon, eh? Don’t worry, gluten-free friends, I just make handheld, munchable pancakes possible!
We all know that biteable and dippable breakfasts are some of the best. So why shouldn’t THE best breakfast food (pancakes) have those characteristics as well? O, well they should; the stars have aligned! Better yet, these pancake bites are SO simple and easy, gluten-free, vegan, allergy-free, and will have the kids LOVING breakfast in every way possible. Bonus for you parents, these aren’t “big weekend production” pancakes, these are so quick and easy to mix up, bake up, serve now, or freeze for later (like a weekday breakfast!).
When I was making these, “pancake bites” was not the intended recipe. It was supposed to be something that would utilize these fun little guys. As I was mixing the batter, the inspiration for an allergen-free pancake bite recipe seemed more pressing. The ease of the batter mixing just felt like I was making a big old batch of classic pancakes too. Plus, I would be able to partake in some weekday mid-afternoon pancake “tasting”.
The food gods shined down as the amount of batter the recipe produced fit perfectly in the neglected 24 cup mini muffin pan in my cabinet! A tablespoon of batter in each mini cup, making them cute and o so perfect for grabbing with the hands and dunking in the goods! I never even had pancake bites and I was already getting flooded with ALL the nostalgic feels! Since I kept this recipe super simple and just flavored with cinnamon, you could go ahead and add in some blueberries or chocolate chips (any fin add-ins you’d like!)
So this is my gift to you with these cinnamony pancake bites. If you know you’re going to have a ho-hum week, prep these little gluten-free pops of pancake love ahead of time, either put them in the freezer or bagged in the fridge, take them out, reheat them in the microwave on a dreary morning and you will INSTANTLY have a fun breakfast to kickstart and brighten your (and your kiddos) day! Mini Gluten-Free Cinnamon Pancake Bites
- Preheat the oven to 375°F.
- In a large mixing bowl, whisk together all dry ingredients and then add in the prepared "egg" and wet ingredients. Mix well to combine and form a smooth pancake batter.
- Fill a (well greased) 24-cup mini muffin tin with the batter, using 1 tablespoon of batter for each muffin cup.
- Bake in the oven for 10-12 minutes.
- Remove and let cool.
- Serve with your choice of syrup, spread, or even plain!
Good thing this pancake bite recipe makes 24 bites, because I feel like this is a breakfast treat you just can’t eat alone! Am I right? Any food like grabable and dippable just needs to be enjoyed with a loved one. Yea, you can have a pancake party by yourself, heck, you can even each these with a fork! But the best way is with your hands, a bowl of syrup on the side, and a good ‘ole pancake pale to enjoy them with!
