Zucchini Bread Quinoa Flakes are a healthy, quick, and easy breakfast you can make in just 2 minutes! They're gluten-free, vegan, and allergy-free! Better than oatmeal and easier on sensitive tummies, this recipe is packed with protein, whole grains, and veggies! It will keep you nourished and satisfied all morning long!

A warm slice of homemade zucchini bread is always a good idea, but if you're short on time and need a quick, protein-packed breakfast, that tastes delicious and only takes 2 minutes...Zucchini Bread Quinoa Flakes is just the solution! A warm bowl of gluten-free quinoa flakes, packed with all the flavors of zucchini bread and plenty of fresh zucchini, ticks all the marks for a healthy breakfast!

Zucchini bread for one

This breakfast bowl is essentially a loaf of zucchini bread for one! Except, this bowl is gluten-free and protein-packed due to quinoa flakes, gives you a dose of vegetables to start your day, sweet and cinnamony, all in one microwavable breakfast for one! No need to dirty a loaf pan of wait 40 minutes to bake an entire loaf of bread! Just zap this hot cereal in the microwave whenever you get the hankering for the seasonal loaf (it doesn't even have to be breakfast!)

How to make zucchini bread quinoa flakes

All you need is six ingredients and a microwave!

  • Quinoa Flakes
  • Flax Seed
  • Zucchini
  • Cinnamon
  • Vanilla Extract
  • Brown Sugar-Style Sweetener
  • Water (this doesn't count!)

Mix everything up in a microwave-safe bowl and cook it on high for just about 2 minutes! It's that easy and quick! You can top your bowl with whatever you'd like. Just like gluten-free instant oatmeal (but easier on the stomach and safer for celiacs). Some people like raisins in their zucchini bread so that would make a great topping option. Whole nuts, seeds, or butters also work, depending on your food allergy needs!

Ingredients

Scale
  • ⅓ Cup Quinoa Flakes
  • 1 TB Milled Flax Seed
  • 1 TB Brown Sugar-Style Erythritol (or preferred brown sweetener)*
  • ½ Tsp Cinnamon
  • ¼ Cup Grated Raw Zucchini
  • ½ Tsp Pure Madagascar Bourbon Vanilla Extract
  • ⅔ Cup Water (or more depending on thickness preference)
  • Raisins (optional, to top)

Instructions

  1. Combine the quinoa flakes, flax, sweetener, and cinnamon together in a microwave-safe bowl and mix.
  2. Add the wet ingreindts, grated zucchini, vanilla, and water. Mix together to combine.
  3. Microwave the bowl for 2 minutes on high. Add more water depening on how thick you want your quinoa flakes!
  4. Carefully remove (it is hot!), and top the bowl to your liking.

Notes

*You can use any sweetner you want. It doesn't have to be a "brown style".

    I've been seeing so many recipes involving quinoa flakes. This dish looks especially delicious. Love that you were added in some zucchini. Such a simple way to sneak in extra vegetables.
