While it can still be hard to find a hearty, crusty gluten-free bread that's also vegan, if you must use a standard sandwich bread loaf, the number one thing to remember is it must be left out overnight to stale or be lightly toasted. But, the best gluten-free bread option for this specific French toast bake is sourdough! Not just any sourdough, but a loaf of crusty cinnamon raisin gluten-free sourdough! Cozy cinnamon, lightly sweetened, perfectly vegan, and allergy-free. The bread in this casserole is truly the star of the show! (Don't like raisins or want a plain version? Try this plain gluten-free sourdough loaf instead!)
Ingredients You'll Need
- Gluten-Free Sourdough Bread: The tang and sweetness of this cinnamon raisin gluten-free bread is so delicious, it's literally what makes this recipe THE BEST!
- Brown Sugar + Granulated Sugar Sweeteners: The molassesy flavor of brown sugar with some granulated sugar, give this French toast bake that comforting sweetness and crisp top. You can use Swerve brown sugar sweetener and granulated sweetener to cut the extra sugar!
- Flax Eggs: Part of the eggless custard to hold this vegan French toast casserole together is two prepared flax eggs.
- Starch or Chickpea Flour: Arrowroot or cornstarch work great, but I recommend using chickpea flour instead! This addition gives the eggless custard a perfect thickness, extra protein, and slightly nutty, eggy flavor.
- Nutritional Yeast: The real eggless eggy flavor comes from nutritional yeast! An essential ingredient for any vegan French toast recipe. It adds the perfect umami, slightly cheesy flavor (and more extra protein)!
- Non-Dairy Milk: I like to use unsweetened light canned coconut milk. Canned coconut milk is thicker than refrigerated non-dairy milk and adds a beautiful richness without the need for butter and oils.
- Cinnamon + Vanilla + Extra Raisins: Cinnamon and vanilla extract are essential for optimal flavor. Adding in some extra pops of chewy raisins is delicious, but totally optional!
The Cinnamon Streusel Topping
You don't have to include this additional cinnamon streusel topping, but, why not? You only need a few extra ingredients!
- Brown Sugar Sweetener: Light or dark will work, again you can use a sugar-free brown sugar sweetener.
- Gluten-Free Flour: All-purpose or whole grain gluten-free flour with more flavor like brown rice or sorghum!
- Vegan Butter: Two tablespoons of your favorite vegan butter to make this cinnamon topping rich and delicious.
- Cinnamon: The more cinnamon the better!
How To Make A Vegan French Toast Casserole With Gluten-Free Bread
Making The Eggless Custard:
- Add the dairy-free milk, chickpea flour (or starch), nutritional yeast, sweeteners, cinnamon, and vanilla together in a bowl.
- Mix it together and allow it to thicken while you prep the bread.
Prepping The Gluten-Free Bread:
- Prep the bread by slicing the gluten-free loaf and cutting it into 1-inch chunks. You can also go for a rustic look and tear the bread into bite-sized irregular pieces!
- Add the cubed bread to the bowl of thickened custard and toss so the pieces are all fully coated. You can toss in the extra raisins during this step as well.
Making The Streusel Topping:
- In a small bowl, combine the gluten-free flour, cold vegan butter, brown sugar, and cinnamon together with a fork. Use the fork to mash the mixture until crumbly.
- Add more gluten-free flour if the mixture isn't crumbly enough.
Preparing The Casserole:
- Ideally, you'll allow the bread to soak in the fridge overnight or for at least a few hours.
- Once the bread has soaked up all the eggless custard, pour it into a casserole dish and sprinkle on the crumble topping.
Baking The Casserole:
- Preheat the oven to 375˚F and bake the French toast for 30-35 minutes, until the top is crisp and golden.

Instructions
- In a large bowl, combine the dairy-free milk, chickpea flour (or starch), nutritional yeast, sweeteners, cinnamon, and vanilla. Mix well to combine so there are no lumps.
- Cube your gluten-free sourdough bread loaf into one-inch pieces. You can even rip the pieces with your hands for a more rustic irregular casserole.
- Add the gluten-free bread pieces into the thick eggless custard along with the raisins or other add-ins you choose to use.
- Mix the bread so all the pieces are fully coated in the custard and allow it to absorb the liquid for at least 2-4 hours, overnight is best. (You can bake it right away, but this is not recommended)
- Prep the streusel crumb topping by adding the sweetener, flour, cinnamon, and cold butter to a small bowl and use a fork to mash together the crumb until clumpy. Place it in the fridge until you are ready to assemble the casserole.
- Preheat the oven to 375˚F and lightly grease an 8x8 casserole dish with butter.
- Dump the soaking bread mixture evenly into the greased casserole dish. Use your fingers to sprinkle on the additional streusel crumb to the top of the casserole.
- Bake the French toast casserole in the oven for 30-35 minutes, until the top is crisp and golden brown.
- Remove the casserole from the oven and allow it to cool for about 10-15 minutes before sprinkling the top with powdered sugar if desired, and serving.
