The ultimate breakfast kabob! Breakfast should never be boring (if it is, you're doing it wrong!); one way to guarantee a morning smile is with some French toast...on a stick! Any food on a stick tends to be a bit more fun! It adds to the eating experience and takes typical French toast to a whole other level! Whether you're looking for a fun summer treat or an easy way to get the kids to actually eat their breakfast, these gluten-free grilled French toast skewers may just be the answer!
Ingredients for gluten-free French toast skewers
You only need 7 ingredients, including the skewers! I used super long wooden kabob skewers that I had but had to cut them myself since I opted to use my grill pan on the stove. You can use any type of grill, which I outlined in this post. I'd suggest using skewers that are between 6 to 8 inches. If you don't have skewers, but you do have wooden chopsticks, those would work perfectly as well! As long as they're safe for cooking (and eating)!

- Gluten-Free Bread
- Canned Coconut Milk
- Chickpea Flour
- Nutritional Yeast
- Cinnamon
- Vanilla Extract
- Sweetener (optional)
How to make grilled French toast skewers
These grilled breakfast skewers take a bit more work than simple grilled French toast, but nothing you can't handle! You'll still need lightly toasted or stale gluten-free bread to start, but you'll be cutting the bread slices into cubes! I left the crust on my bread slices, but you can remove the crust if desired. Once you have a bowl of bread cubes...
- Take a wooden skewer and slide about 4 or 5 (depends on the size of your bread) cubes onto the kabob (covering the pointy end).
- In a wide, shallow bowl, mix together your vegan French toast slurry.
- Dip your bread kabobs in the mixture to fully coat.
- Grill the French toast skewers for about 2-4 minutes on each side, until you see those nice grill marks!
Perfect healthy breakfast for kids
Carbs and sugar seem to be a theme when it comes to children's breakfast options. Standard French toast is the definition of that. It won't leave them satisfied for long, but with a few simple swaps, you can make French toast healthy, allergy-free, and fun at the same time! They'll entice any picky eater and they won't even know this French toast is "healthy"! These French toast kabobs are:
- Gluten-Free
- Top 8 Allergen-Free, no eggs, dairy, nuts, peanuts, or soy!
- Vegan
- Oil and Sugar-Free (if you want them to be!)
- A great mix of carbohydrates, fats, and protein! Whole grain gluten-free bread + coconut milk fats + chickpea flour protein!
Maybe the most important selling point is how mess-free these skewers are! No need to drench the French toast in sticky syrup, since the sticks allow hands to be kept clean and easy dipping action to occur! Everyone can have a customized dipping option too.

Ingredients
- 8-10 Wooden Skewers
- 8 Slices of Gluten-Free Bread (lightly toasted or stale)
- 1 Cup Unsweetened Light Canned Coconut Milk
- ¼ Cup Chickpea Flour
- 2 TB Granulated Erythritol (or preferred sweetener, optional)
- 1 TB Nutritional Yeast
- 1 Tsp Cinnamon
- ½ Tsp Pure Madagascar Bourbon Vanilla Extract
Instructions
- Prep your gluten-free bread by lightly toasting it if fresh or leaving it stale, then cutting the 8 slices into 1-inch cubes.
- Slide about 4-5 cubes of bread on each skewer, right through the inside middle of the bread, covering the pointy end of the skewer.
- In a wide bowl, mix together the rest of the ingredients for the slurry.
- Preheat the grill you'll be using over medium-high heat, oiled or greased well.
- Dip each breaded skewer in the slurry mixture until nicely coated before placing each skewer directly on the grill grates to cook.
- Cook the French toast skewers for 2-3 minutes on each side until they're crisp and have nicely browned grill marks.
- Serve right away with your desired dipping sauces and toppings!
