When it's pumpkin season you're under obligation to make a loaf of pumpkin bread. Of course, there's no beating the classic. Simple, humble, and packed with pumpkin perfection!
How to make Gluten-Free Pumpkin Bread
Sometimes the easiest recipes are the best recipes! No crazy ingredients, no complicated techniques. A quick mix of the ingredients in one bowl, pour it in a loaf pan, and bake, baby, bake!
Ingredients you need:
- Brown Rice Flour
- Gluten-Free All-Purpose Flour
- Baking Powder
- PUMPKIN
- Flax Eggs
- Sweetener (Sugar-Free Brown and Granulated)
- Vanilla Extract
- Cinnamon, Ginger, Allspice
You don't need any liquid for this quick bread! The pumpkin and flax eggs provide the right amount of moisture and yield a perfectly soft, tender crumb! Pure pumpkin magic!
Test for doneness
When it comes to gluten-free and vegan baked goods, the best way to test for doneness is the toothpick test. As long as the toothpick comes out "mostly" clean, the baked good should be done. This pumpkin quick bread is super moist, so the toothpick will never be completely clean, but as long as there aren't globs of batter sticking to the "test stick", your loaf is good! If not, let it bake for another 5 minutes and repeat the test!

What are the benefits of pumpkin?
Pumpkin is loaded with all the good vitamins and minerals. 100% pure pumpkin in a can is just as nutritious as fresh, so don't worry about that! (How can you pass up the 86¢ cans from Walmart?) This is NOT canned pumpkin pie filling though! Always check the wording on the can before you throw it in your cart! Pure pumpkin has only about 40 calories in half a cup of puree, it's fat-free and only 10g of carbs. Pumpkin is great for boosting your immune system, eye health, skin, blood pressure, and reducing cancer risks! It's packed with:

- Beta-Carotene (Vitamin A)

- Plenty of antioxidants, minerals, and fiber!
Is pumpkin a fruit or vegetables?
Take a guess, I'll wait.....FRUIT! Technically all squashes are fruits because then contain SEEDS! Always remember this rule of thumb. If it contains seeds, it's a fruit.
How about add-ins?
I made this recipe for the sole purpose of having a clean, simple, classic pumpkin bread, BUT, If you want to take your pumpkin bread up a notch feel free to get wild with additional ingredients! Here are some ideas:
- Chocolate Chips
- Dried Fruits (like raisins)
- Nuts or Seeds (pecans or walnuts are great if you're not nut-free! Pumpkin seeds (pepitas) are great for mixing into the batter or sprinkling on top!)
- Frosting or Glaze for spreading or drizzling on top (if you want a more "dessert" loaf!)
Perfect Fall breakfast or healthier dessert
Spread on some vegan butter, cream cheese, nut/seed butter and you have a fantastic treat with your morning cup 'o joe! It's great as an afternoon snack, or a not-too-sweet and healthier dessert while you're cuddled up in front of the fireplace (dreams!) It's perfect eating warm or cold, whatever vibes you're feeling!
Starbucks Pumpkin Bread
Starbucks pumpkin is not gluten-free, it also contains soy, eggs, peanut oil, but surprisingly not dairy! So many celiacs lament not being able to grab a seasonal slice with their PSL, but no worries! This loaf is 100% better (and healthier!). Stud the top of the unbaked loaf with pepitas and you'll have a homemade copycat Starbucks pumpkin bread!
Storing, Freezing, Reheating
After you've baked your perfect pumpkin bread, allow it to cool completely on a wire rack before storing the entire loaf in an airtight container. It can be kept in the fridge or at room temperature for about 4-6 days. If you'd like to freeze the loaf, slice it up first, wrap each slice individually in wax paper or foil, then store them together in a big Ziploc bag or freezer container. To reheat, just take out the slices you want and allow them to thaw in the fridge or give it quick heating in the microwave or toaster oven!

Ingredients
- 1 Cup Brown Rice Flour
- 1 Cup Gluten-Free All-Purpose Flour
- 2 Tsp Baking Powder
- 1 Tsp Cinnamon
- 1 Tsp Ground Ginger
- ½ Tsp Ground Allspice
- 1 ¼ Cup Pure Pumpkin Puree
- ¾ Cup Granulated Erythritol (or preferred granulated sweetener)
- ¼ Cup Brown Sugar-Style Erythritol (or preferred drank brown sugar)
- 2 Prepared Flax Egg (2 TB Milled Flax Seed + 4 TB Water)
- ½ Tsp Pure Madagascar Bourbon Vanilla Extract
Instructions
- Preheat the oven to 375°F.
- Mix together the flax eggs and set them aside to gel while you prep the rest of the batter.
- In a large mixing bowl, combine the flours, baking powder together, spices, and whisk together.
- Add the pumpkin, flax eggs, both sweeteners, and vanilla (and any optional add-ins).
- Mix everything together until a uniform, thick, wet batter is formed.
- Pour the batter into a greased 8x4 standard loaf pan and smooth out the top.
- Bake the loaf in the preheated oven for 35-40 minutes (until a toothpick comes out mostly clean).
- Remove the loaf from the oven, let it cool slightly, before turning the loaf out of the pan and allowing it to completly cool on a wire rack before storing.
Notes
*You can use all gluten-free all-purpose flour if you need to.
**This loaf makes 8 slices.
