French toast is having a moment. Pancakes and waffles may always get the spotlight, but French toast needs to get the recognition it deserves! Pan-tasted gluten-free bread, topped with a crisp, fresh apple cinnamon compote, now we're talking! Once you figure out how to avid just a sad plate of soggy bread, French toast becomes a go-to sweet alternative to plain old toast you'd pop in your gluten-free toaster (no avocado please!)
Start With The Right Bread
When it comes to gluten-free bread that's also vegan, options can be slim. Looks for some nice big slice white bread, from Aldi, BFree, or Little Northern Bakehouse! The best thing about making some good French toast is that you don't need fresh fluffy bread. You actually want stale bread! If you use fresh, fluffy, soft bread, soak it in your "egg" mixture, and then try to pan-fry it...sad sogginess will occur!
Pro Tip: Leave your bread out overnight or give it a quick light toast in a toast oven if you don't have "stale" bread!
Soak It In The Best Egg-Free Coating
- Chickpea Flour (The key ingredient for your egg-free soak! It creates a nice thick gooey crust coating!)
- Nutritional Yeast (Adds that slightly, cheesy, nutty, eggy flavor.)
- Non-Dairy Milk
- Vanilla Extract (maple extract would be beautiful too!)
- Cinnamon (lots of cinnamon here!)
Mix until combined, dip your gluten-free bread in to coat both sides, then you're ready to pan-fry until crisp and golden brown!
Easy Apple Cinnamon Compote
This is where the magic happens! While you're frying up your toast, you can have your apples and cinnamon simmering away on the stove, allowing them to naturally get syrupy, sweet, and glistening, ready to be piled on your crisp and warm French toast! It's just 4 ingredients too!
- Peeled and Cubed Apple (Go for something crisp like Fuji, Honey Crisp, or Jonagold!)
- Light Brown Sugar-Style Sweetener
- Cinnamon
- Vegan Butter
All you have to do is peel, roughly chop your apple into bite-sized pieces, so they soften evenly. Melt the butter in the pot, add the apple, cinnamon, and sweetener. Let them simmer away for just about 5-8 minutes until the apples soften and you see natural syrup start to form! Yes! It's that easy! You can cook the apples down further if you want a super soft more traditional compote, but I liked keeping the apples slightly crisp and undercooked! You can totally use this apple cinnamon topping for too! Pancakes, waffles...ice cream.
Serving Your Apple Cinnamon French Toast
This recipe makes enough for 2 servings and can easily be scaled to serve more! Once your French toast has been pan-fried and plated, simply divide the apple cinnamon compote topping between the two plates of toast! You can add maple syrup if you'd like, but there really is no need since the natural sugary juices of the lightly cooked apples act as the perfect substitute! Add a little powdered sugar and extra cinnamon to finish the presentation before diving in!

Ingredients
French Toast:
- 4 Large Slices of Gluten-Free Bread (stale or lightly toasted)
- ¾ Cup Unsweetened Non-Dairy Milk
- 2 TB Chickpea Flour
- 1 TB Granulated Sweetener (optional)
- 1 ½ Tsp Nutritional Yeast
- 1 Tsp Cinnamon
- ½ Tsp Pure Madagascar Bourbon Vanilla Extract
Apple Cinnamon Compote:
- 1 Large Apple (about 2 cups, peeled, chopped)
- 2 TB Light Brown Sugar Sweetener
- 1 TB Vegan/Allergy-Free Butter
- 1 Tsp Cinnamon
Instructions
- Prep your gluten-free bread slices by lightly toasting them, if fresh, or leaving it stale overnight.
- In a wide bowl, mix together the milk, flour, nutritional yeast, optional sweetener, cinnamon, and vanilla.
- Heat a greased non-stick skillet over medium heat on the stove and pan fry your dipped toast slices for about 3 to 4 minutes, each side, until golden brown.
- In a separate pot on the stove, heat the vegan butter over low heat until melted before adding your chopped apple, cinnamon, and brown sugar sweetener.
- Mix the compote together and allow it to cook for anywhere from 5-10 minutes, depending on the size of your apple pieces and desired softness. Once a nice syrup starts to form in the pot, your compote is ready to be used.
- Stack 2 slices of French toast per plate and divide the apple cinnamon topping between the 2 servings. Top with powdered sugar and extra cinnamon, if desired!
