I just love getting super excited about recipes! Our "back-to-school" classic remake series would not be complete without some pizza, would it? I've had these in the "to-post" file for a year now and it seemed like the perfect time to share them. We all know that pizza is a favorite among kids (and adults), plus bagels are pretty enticing too. When you combine the two, you know you're going to have a crowd-pleasing meal even the pickiest of eaters will love! Did I mention they're gluten-free, allergy-free, and vegan (or course!).

An after-school snack that my brother and I both used to love (okay...he still does), was those mini frozen pizza bagels, aka Bagel Bites! They were SO good, just pop a few in the toaster oven, let the cheese melt a bit and the bagel crisp up...perfect bite! As we got older, we transitioned to Totino's pizza rolls more often (my brother still have me buy him bags of those pockets weekly). Those you just pop in the microwave and watch the greasy action happen and insides ooze out.

However, my favorite "pizza bagel" was the homemade English Muffin pizzas my mom used to have my brother and I make. Just cut open a nice fresh English Muffin, spoon on some sauce, shredded cheese, and pop it in the toaster oven. They tasted like a million dollars, I kid you not. My mom would make up a little pizza assembly line and we would get to make them ourselves with her super vision. I LOVED when she called us into the kitchen to make them. So fun and so delicious! My mom always make food fun and inviting 😉

I mean, you could totally make some English Muffin pizzas, but I felt like bagels were a little more iconic to everyone. You can use my homemade bagel recipe or some BFree Foods bagels which are 100% allergy-free too! Gluten-free, dairy-free, egg-free, soy-free, nut-free, peanut-free, vegan....you get it. Plus, these pizza bagels are only 3 ingredients: bagel, sauce, and cheese. But I give you a quick homemade pizza sauce so, we have some spices in there! Feel free to totally customize them with toppings too! Well, let the kiddos have fun customizing and assembling!

Ingredients

Scale
  • Per Pizza Bagel:
  • 1 Gluten-Free Bagel
  • ¼ Cup Pizza Sauce (recipe below)
  • ¼ Cup Shredded Vegan Mozzarella Cheese*
  • Pizza Sauce:
  • ½ Cup Plain Unsalted Tomato Sauce
  • 1 TB Tomato Paste
  • ½ Tsp Minced Garlic
  • ½ Tsp Onion Powder
  • ½ Tsp Dried Parsley
  • ½ Tsp Dried Basil
  • ¼ Tsp Black Pepper

Instructions

  1. Preheat the oven or toaster oven to 350°F.
  2. In a small bowl, combine the pizza sauce ingredients.
  3. Slice your bagel for 2 open-faced halves.
  4. Spoon on the sauce and sprinkles on the cheese to each half.
  5. Place in the oven for 10-15 minutes until bagel is crisp and cheese is melty.

Notes

*So Delicious or Daiya shredded vegan mozzarella work best!

There you have it! Such a quick and easy meal! Hey, and if you want pizza for breakfast...well I think this fits the bill rather nicely, don't you think? Who would have thought that a celiac could have pizza and a bagel all at once? The allergy-free possibilities are endless, my friends and we all deserve to enjoy the classics we grew up with!

    My youngest has a dairy allergy. We usually just leave the cheese out of his food. That cheese looks like it would be pretty good!

    Ohh this looks so good and totally reminds me of my childhood as well. We never had bagels (that's not really thing here in Austria) but we had pizza toast. 😀 A slice of white bread, tomato sauce, cheese and small diced bell pepper was the #1 food at kids' birthday parties. Ahhh good memories!
