All of the cake qualities of Funfetti in cookie form! Gluten-free and vegan Funfetti Thumbprint Cookies, soft, sweet, & tender with a “cream cheese” center to mimic frosting! The iconic celebratory dessert for any occasion!
So, if you didn’t know…HAPPY BIRTHDAY TO ME! Let’s bring out the fanfare, balloons, and of course, the sprinkles! Just like a birthday without pancakes is unheard of, a birthday without sprinkles is no birthday at all! Sprinkles are the edible confetti of the day and they signal to everyone that a celebration is at hand!
Y’all may be thinking why then, did I not make Funfetti pancakes…I really don’t have an answer for that. I guess that will be next year 😉 It’s okay though, these cookies are out of the park! I didn’t intentionally plan on them having the texture, crumb, and tenderness of actual cake, but that’s what happened!
It’s like biting into a fork-full of cake but in cookie form. I guess you can say these are “cake” cookies. They even have some homemade “cream cheese” frosting to tie it all together! I should have poked some candles in the centers too, but alas, I’m only just thinking of that now as I type this.
Over the years, my birthdays have tended to get rather lackluster. (I know. I say that like I’m old and graying.) That must just be the course of life though. Birthdays lose a bit of the charm with each passing year. With 20 now under my belt, I officially move out of my teens, never to be called a teenager again. How I had always pictured myself at 20 is nothing like how I feel now. The past couple of years are nothing like I would have ever fathomned.
They keep talking about quarter-life crisis now and I do believe that it’s true. Mid-life crisis is so 1990s. With millennials (am I a millennial?) we’re experiencing things a lot quicker/sooner and a lot more of them. I’m pretty sure I already hit my quarter-life crisis (and am still in said crisis). That seems like the norm, which is rather sad. I just want some time to breathe, everything is so rushed now.
Can we stop a moment and smell the funfetti cookies? No, I don’t think we’ll ever find ourselves or society any more relaxed (at least not in the near future). If we want to find any sort of breathing room, semblance, or “okay-ness” with our own intuition it’s up to us and no one else. You’re going to have to tune out so much and find a way to stay focused on what you want and your own peace and well-being. Let’s be real here. You may be lucky enough to find and have the support of a select few who truly and wholeheartedly want to route you on, but for the most part you’re on your own.
That’s what I’ve learned after 20 years. Of course, there are going to be circumstances that will force and dictate some of your decisions and the directions you take that you just have no control over. That’s the other thing. NOTHING will go as planned. Right when you think you’ve found that path of focused self-direction and “calm”, don’t believe it. Something will change or force you to change the things you were mapping out in your mind or everything you thought you had and loved can be taken away. Then, alone, you have to form a thick tough skin, pick yourself back up, and find a way to keep going, to keep trying. That’s all you can do and that’s also the hardest part.
You are your own worst enemy. That is fact. You can literally make or break yourself. You hold so much power in your mind and hands. You’ll end up making so many bad decisions, but also so many right decisions. With all that, each day you’ll start to really see that power that only you have in your life. The reality is life is going to hurt and beat you, so you’ll need to harness your power and start to mold yourself into something unbreakable. Don’t give the power to you enemy-self, but to your superman/woman-self.
Funfetti Thumbprint Cookies
- 1 Cup Gluten-Free All Purpose Flour
- ¾ Cup Sorghum Flour
- ¼ Cup Arrowroot Starch
- 2 Tsp Baking Powder
- ⅓ Cup Granular Erythritol
- 1 Cup Unsweetened Applesauce
- 2 TB Allergy-Free Sprinkelz
- ½ Tsp Pure Madagascar Bourbon Vanilla Extract
- For the Cream Cheese Center:
- ⅓ Cup Daiya Plain Cream Cheese
- ⅓ Cup Powdered Erythritol
- ¼ Tsp Pure Madagascar Bourbon Vanilla Extract
- More Sprinkelz (to top)
- Preheat the oven to 375°F.
- In a large mixing bowl, combine all cookie ingredients and mix to form a well combined batter.
- On a Silpat or parchment paper lined baking sheet, form 14 (2 tablespoons each) balls with your hands and place on the baking sheet, flattening them a bit.
- Bake in the oven for 15 minutes.
- Remove the baked cookies after 15 minutes, using your thumb, make an indent in the center of each. Then place back in the oven for about 5 more minutes, remove and let cool.
- In a small bowl, mix together the cream cheese ingredients (not the spinkelz), until you get a soft frosting texture.
- Fill the centers of the cookies with 1 teaspoon each of the cream cheese frosting and then sprinkle the center with additional sprinkelz.
This post got a little deeper than I’d planned. (What a “Debbie Downer”! I thought this was about celebrations and funfetti?)
