Yes, yes I did! From purple sweet potato pancakes to tots and gnocchi. Just normal sweet potato doughnuts didn’t cut it for me! These pretty little baked gluten-free doughnuts are about to make your day (they’ve already made mine!) There is always something so special about purple food. You can never be frowning when you’re eating something purple ๐ No one is going to want your typical beige doughnut any longer! Trust me!
All complete with a lovely and simple ginger spiced sugar-free glaze to shine things up! Like shiny purple orbs of potato love! Coffee and a doughnut, anyone? I’d invite you over for brunch this weekend, how about that? I’m always glad and willing to bake up some treats to share! One of my favorite things about cooking and baking is sharing my recipes with someone else. Especially when I get to share a recipe that includes one of my favorite (and out there) ingredients!
The more ways I can incorporate foods, like purple sweet potatoes, into delicious recipes and introduce them to others the better! Since no one can turn down a doughnut, well, I think you get the picture here! Ingredients
- Doughnuts:
- 1/4 Cup Arrowroot Starch
- 3/4 Cup Boiled and Mashed Purple Sweet Potato
- 1/2 Tsp Baking Powder
- 1/4 Cup Unsweetened Non-Dairy Milk
- 2 TB Erythritol
- 1/2 Tsp Pure Madagascar Bourbon Vanilla Extract
- Ginger Glaze:
- 1/4 Cup Powdered Erythritol
- 1 1/2 TB Water
- 1 Tsp Ginger
- 1/4 Tsp Allspice
Instructions
- Preheat the oven to 375ยฐF.
- Peel, boil, and mash the purple sweet potatoes.
- In a large bowl, combine all doughnut ingredients and mix to combine.
- Grease a doughnut pan and divide the dough between 4 of the molds.
- Bake in the oven for 12-13 minutes.
- To make the glaze, combine all ginger glaze ingredients in a small bowl and whisk together.
- Dip the baked and cooled doughnuts in the ginger glaze and let dry.

Ginger Glazed Purple Sweet Potato Doughnuts seemed a more structured and searchable option. We’ll just say “aka” Galaxy Doughnuts, though. That will make them even more enticing to try! So get out those doughnut pans and get creatively (gluten-free, vegan, allergy-free, paleo, grain-free) baking! (What a mouthful!)
