These delicious Gluten-Free Gingerbread Waffles are vegan, allergy-free, and so easy to make! This quick and simple holiday breakfast is cozy and comforting, perfect for Christmas morning or a chilly winter weekend! Healthy and low in sugar, these light, and fluffy waffles have the perfect amount of spice and a touch of sweetness in every crisp and tender bite!

One of the essential flavors of the season! Gingerbread is that spicy, slightly sweet, and richly flavored treat we've all grown to love. From classic gingerbread cookies to cake, it's a must during the holidays! Imagine waking up on Christmas mornings to the warming cozy smells of baked (waffled?) gingerbread wafting up from the kitchen. A breakfast that the whole family will love and these gluten-free gingerbread waffles are so easy to make you'll be serving them all winter long!

A Healthier Christmas Breakfast

These fluffy gluten-free waffles are vegan and oil-free. No butter and lower in sugar, you can start the day a little healthier so you can enjoy more Christmas treats later on! This easy homemade recipe is:

Ingredients For Gingerbread Waffles

  • Gluten-Free All-Purpose Flour: Your favorite gluten-free all-purpose flour is the base for these homemade waffles! Pro tip: If you have a plain gluten-free pancake/waffle mix, you can use that instead of plain flour!
  • Baking Powder + Baking Soda: A pinch of baking soda and the baking powder will make your waffles fluffy and crisp! The baking soda reacts to the acidity of the vegan buttermilk to help lift the waffles.
  • Molasses: Molasses is the essential sweetener for gingerbread! A touch of sticky subtly sweet molasses adds depth and warmth to the waffles while balancing out the spices.
  • Brown Sugar Sweetener: To add a little more moisture and rich sweetness to these waffles just a tablespoon of dark brown sugar or sugar-free brown sugar sweetener is used.
  • Gingerbread Spices: Go as heavy on the ginger as you want, you can use a pre-made mix or your own combo of ginger, cinnamon, cloves, and nutmeg.
  • Vanilla Extract: A splash of vanilla helps to balance the spices and adds to the warming flavors in these vegan waffles.
  • Vegan Buttermilk: Rich and creamy homemade vegan buttermilk add tanginess and moisture to these waffles! It keeps them fluffy and tender. Just use your favorite non-dairy milk and a teaspoon of vinegar.

Ingredient Substitutions

  • If you don't have molasses on hand or you don't like it, you can swap in pure maple syrup.
  • Dark brown sugar can be replaced with light brown sugar or granulated sugar, but the waffles will have less of a rich sweetness.
  • The more ginger you add to the recipe, the spicer the waffles will be. Adjust this to your palette's preference.
  • Making vegan buttermilk with thick full-fat non-dairy milk the coconut is best. However, any milk you have on hand will work.

How To Make Gluten-Free Gingerbread Waffles

  1. Whisk together the dry ingredients, including the gluten-free flour, baking powder, baking soda, and spices.
  2. Next, add the molasses, brown sugar, and vanilla.

  1. Use a fork to mix the sticky sweetener into the flour until it's clumpy.
  2. Add in the vegan buttermilk and mix the waffle batter smoothly. Add more liquid as needed to get a thick but drippy and uniform batter.

  1. Pour ¼ cup of batter onto a non-stick mini waffle iron (½ cup for a standard waffle iron or ¾ for a large Belgium waffle iron).
  2. Allow the waffles to cook before carefully removing them from the iron and serving them warm with your favorite toppings.

Recipe Tips & Tricks

  • Even if your waffle maker is non-stick, always lightly grease the iron grates with non-stick spray or a light brush of oil. Not only does it ensure they'll be easy to remove from the waffle iron, but it helps make the edges super crisp!
  • For extra crispy waffles, you can leave them on the waffle iron for an extra minute or two after the indicator says they're done. Also, make sure the waffle iron is hot before adding the batter, and re-grease the grates as needed.
  • Keep your waffles from getting soggy by placing finished waffles on a wire cooking rack in the oven set at 250°F until you have finished using all of the waffle batter.
  • As noted above, the amount of batter per waffle will vary depending on the size of your waffle maker.

Topping Ideas

While these waffles have more than enough flavor to be enjoyed plain, here are some yummy topping suggestions that go well with gingerbread waffles.

  • Pure Maple Syrup
  • Gingerbread Syrup
  • Powdered Sugar (or Sugar-Free Sweetener)
  • Vegan Butter
  • Drippy Nut or Seed Butter
  • Coconut Whipped Cream
  • Vegan Marshmallow Fluff
  • Fresh Berries, Sliced Banana, or Pomegranate Gems

How To Make Ahead & Freeze

Whether you're prepping a big holiday brunch and plan on meal prepping some sweet and savory breakfast casseroles for your overnight guests, these festive eggless waffles make a great addition to the spread too!

  • Make-Ahead: To make these vegan gingerbread waffles in advance, cook them and allow them to cool before wrapping them individually in paper towels and placing them in an airtight container or Ziplock bag in the fridge for up to 3-4 days. Remove and heat them up in your toaster. If the waffles are too large you can reheat them in the oven on a baking sheet at 350° until crisp. You can even toss them in an air fryer to re-crisp!
  • How To Freeze: For longer-term storage, you can freeze leftover waffles, and wrap cooled waffles individually in wax paper before placing them in an airtight container or freezer bag for up to 4-6 months. To reheat them, do not thaw, just cook them in the toaster (like a store-bought waffle) or place them in the oven at 350°F on a lined baking sheet for about 10-15 minutes, flipping them halfway through, until crisp!

Ingredients

Scale
  • 1 Cup Gluten-Free All-Purpose Flour
  • ½ Tsp Baking Powder
  • ½ Tsp Baking Soda
  • 2 Tsp Gingerbread Spice (or 1 Tsp Ground Ginger, ½ Tsp Cinnamon, ¼ Tsp Ground Cloves, ¼ Tsp Ground Nutmeg)
  • 2 TB Blackstrap Molasses
  • 1 TB Dark Brown Sugar Sweetener (or preferred dark or light brown sugar)
  • 1 Tsp Pure Madagascar Bourbon Vanilla Extract
  • 1 Cup Unsweetened Non-Dairy Milk
  • 1 Tsp White or Cider Vinegar

Instructions

  1. Grease and preheat your waffle maker.
  2. In a small bowl, mix together the non-dairy milk and vinegar so it has time to sit and "curdle".
  3. In a large mixing bowl, whisk the flour, baking powder, baking soda, and spices together until smooth.
  4. Add in the molasses, brown sugar, and vanilla. Use a fork to distribute the sticky sweetener into the flour until clumpy.
  5. Pour in ¾ cup of the prepared vegan buttermilk and mix the batter smooth. If the batter is too thick, add a tablespoon more of the buttermilk as needed.
  6. If using a mini waffle maker, add ¼ of the batter to the hot waffle maker and allow it to cook before removing and repeating the process for the rest of the batter (a total of 4 waffles). If using a standard waffle maker, add ½ the batter to the hot waffle maker, allow it to cook, and repeat (a total of 2 waffles).

Notes

  • You'll make more vegan buttermilk than is needed, so you should have a few tablespoons left over.
  • To store leftovers: Wrap cooled waffles in paper towels before storing them in an airtight container or Ziplock bag in the fridge for up to 3-4 days. Reheat them in a toaster or larger batches in the oven at 350°F.
  • To freeze leftover waffles: Allow your waffles to cool completely to room temperature in a single layer on a wire rack. Wrap them individually in wax paper and place them in a freezer-safe bag or container for up to 6 months.
  • To reheat waffles: Take frozen waffles directly from the freezer and pop them into your toaster or, for larger-sized waffles, you can toast them back up in the oven at 350°F for about 10 minutes (flipping halfway through).
