I know what you’re thinking. This is just a trendy marketing scheme to entice you to click over and check out this recipe. Well, if you made it this far, I guess it worked, eh? But really, none of us can deny that pumpkin spice goodies are pretty delicious, no matter how overdone and over-promoted they are! I stock up on my fair share of pumpkin spice peanut butter, pumpkin spice cereals (this and this), and of course a little bit of this never hurt!
My favorite pumpkin things for Fall are all the baked goods though and that means my own gluten-free and vegan goodies. From waffles to pancakes, French toast, brownies, mug cakes, oatmeal, breads…okay, you get the picture! There’s something about pumpkin in the morning that just makes everything about Fall a little bit more “okay” for someone who mourns summer.
Fall is one of those things I “try” to like and I do like the “idea” of it, but when I start to see the sunshine waning, days getting shorter, no longer being able to just run out of the door without a jacket, not to mention you’re in the thick of school. However, I would gladly take the Fall season over those horrid winter months of January, February, and March. That, my friends, is the worst stretch of months, there is no pumpkin, no spice, on tears and gloom.
If making Fall the best as can be expected, only requires some pumpkin-y baking projects, well, I think I’ll take it! I actually think those cozy smells of Fall baking are even better than the taste (maybe)! The mouthwatering aromas of cinnamon, maple, pumpkin, and cozy comfort are just too much to bear; the anticipation is always the best part of “good things”. Don’t get me wrong, sitting down with a friend, a big warm slice of gluten-free pumpkin spice coffee cake, with a mug of piping hot coffee and meaningful conversation is pretty damn welcoming too!
And when it’s a little too chilly outside, at least we get that extra “free” warmth from turning on the oven and baking this delicious vegan cake! Breakfast, brunch, dessert, coffee cake fits in at any time of day. Through in some fresh pumpkin (veggie/fruit?), and that little extra java boost and “play-on-words” of pumpkin spice coffee actually IN pumpkin spice coffee cake! This may just be one of the trendiest coffee cake you’ll ever bake and eat, but don’t fret, this is a trend you’ll want to hop on the bandwagon with!
Gluten-Free Pumpkin Spice Coffee Cake
- Cake Batter:
- 2 Cups Gluten-Free All Purpose Flour
- ½ Cup Erythritol
- 2 TB Pumpkin Spice Ground Coffee
- 2 Tsp Baking Powder
- 1½ Tsp Pumpkin Pie Spice
- ½ Tsp Maple Extract
- 1 Cup Pure Pumpkin Puree
- 1 Cup Brewed Pumpkin Spice Coffee
- Crumb Topping:
- 1 Cup Gluten-Free Quick Oats
- ¼ Cup Gluten-Free All Purpose Flour
- ¼ Cup Pure Maple Sugar
- 1 Tsp Pumpkin Spice Ground Coffee
- Preheat the oven to 375°F.
- In a large mixing bowl, combine all cake batter ingredients. Mix to form a smooth, thick cake batter.
- In another bowl, mix together the crumb topping ingredients until it combines and becomes crumbly.
- Spread the cake batter evenly in a greased 8x8 square baking pan and then add the crumb topping evenly over top of the cake batter (press it in a bit).
- Bake the coffee cake in the oven for 20 minutes. Remove and let cool before slices into 9 squares.
Ahhh, the smell of that pumpkin and the maple crumb topping? Literally all I need right now, in this season! Okay, the sweaters and scarves don’t hurt either, but this coffee cake? This pumpkin spice coffee cake? This gluten-free, allergy-free, and vegan pumpkin spice coffee cake? YES! Autumn is like one of those annoying family members. You love ’em, hate ’em, but just have to live with ’em! Some pumpkin spice coffee cake helps with that (meaning we must frequently bake it…weekly!)
