These Gluten-Free Carrot Cake Sugar Cookies are fun, delicious, and full of veggies! These carrot-shaped cut-out carrot cookies are vegan and allergy-free, made with a carrot cake dough and decorated with dairy-free & naturally colored white chocolate. They're a perfectly cute & kid-friendly treat for any Easter or Spring celebration!

O my gosh, guys! These cookies! They're not only carrot-shaped, but made with a literal carrot cake cookie base, and perfectly decorated with allergy-free white chocolate happiness! Could you ever ask for anything better in an Easter/Spring themed cookie? I don't think so! Gluten-free holiday-themed cookies seem to be trending over here. Not only are they cute and fun, but they're easy to make, delicious to eat, and no one passes up an allergy-free cookie!

Ingredients for the carrot cake cookie dough

These carrot cake cookies aren't the typical oat-based breakfast cookies you're used to seeing on the internet. No, no. These are cut-out carrot sugar cookies instead, with a real carrot cake dough! Here's what you need:

  • Gluten-Free Baking Flour
  • Sorghum Flour
  • Granulated Sweetener
  • Baking Powder
  • Cinnamon
  • Ginger
  • Nutmeg
  • Vanilla Extract
  • Vegan/Soy-Free Butter
  • Carrot Puree

Yes, these gluten-free cookies are FILLED with real vegetables! The secret baking ingredient I always use and yields the best, moist, stable, vegan, egg-free, dairy-free gluten-free baked goods. Baby food jars of pure veggie or fruit puree work as a fantastic egg-replacement that works as a binder and keeps your baked goodies moist (and healthy!)

How to make the decorated carrot cake sugar cookies

Time to mark the calendar with a weekend baking extravaganza with the family! Baking and decorating sugar cookies is always more fun with friends, right?

This is the exact cookie cutter set I bought (it's only $3 at Walmart), but you can get it on Amazon too. Using this carrot-shaped cookie cutter yielded 14 ⅛th inch sugar cookies. If you use a different shaped or sized cookie cutter, the number of cookies you get out of the dough with vary (obviously).

How to make the carrot sugar cookie base:

  1. Mix together all your cookie dough ingredients, using your hands to work in the cold vegan butter and adding the carrot puree last. You'll need 4 tablespoons (measure this as tablespoons, not ¼ of a cup) of the carrot puree, but you may need a teaspoon or so more. I ended up using 4 tablespoons plus 1 extra teaspoon.
  2. CHILL the dough for at least 30 minutes to an hour before rolling the dough out to a ⅛-inch thickness. Pro Tip: Sprinkle extra flour on the dough to make things easier to roll and cut.
  3. Cut out as many carrot cookies as you can with the dough (re-rolling as needed). I made 14 cut-out cookies.
  4. Evenly space the cookies out on a baking sheet and bake them for 13-15 minutes in a preheated 350°F oven. Remove and let them cool completely on a wire rack before decorating.

How to decorate the carrot cake cookies:

  1. Melt the allergy-free white chocolate in a wide bowl in the microwave, using 20-second increments, stirring between, until melted so it doesn’t burn. Use about ⅓ of the white chocolate for the green carrot top portion and the rest for the orange carrot base. You can divide it up before or after you melt the chocolate.
  2. Mix red and yellow natural food dye together in the larger portion of melted white chocolate until you get the desired orange shade you want. Do the same, but use green coloring to get the green shade you want in the smaller portion of white chocolate.
  3. Using a spoon, gently spread on a thin layer of orange chocolate to the body of the cookie and do the same for the green tops.
  4. Before the green chocolate tops dry, sprinkle on some green sanding sugar (if desired).

Healthy carrot cookie tips, swaps, and storage

  • You can use ALL gluten-free baking flour if you don’t have delicious sorghum flour on hand (I like to mix flours for a better tasting gluten-free cookie!)
  • I always use Beech-Nut Sweet Carrot baby food jars. They're only carrot and water. If you opt for something else or making your own by blending boiled carrots, you'll have to determine if you need more or less puree in the dough as the water content will vary.
  • If you're not vegan or don't have certain allergies, you can use colored candy melts instead of dying white chocolate (however, the "fresh" white chocolate tastes amazing!)
  • Storage: These vegan carrot cake cookies can be stored at room temperature in an airtight container 1 week (they'll be fine past that, but will start to get stale). You can also freeze the decorated cookies, wrapped in plastic wrap in a container or freezer bag for 6 months. It's better to freeze the undecorated cookies though if you plan on doing this. To thaw, just remove and let them come to room temperature.

Do they actually taste like carrots?

Yes! But not straight up raw carrots, they taste like carrot CAKE. They're sweet sugar cookies with the iconic carrot cake spices: ginger, cinnamon, and nutmeg. The white chocolate "icing" acts as the classic cream cheese frosting. Each bite tastes like the Spring season's delicious arrival! Plus, getting a dose of veggies in a delicious gluten-free cookie sounds like a good idea, don't you think? They're Easter bunny approved, btw.

Ingredients

Carrot Cake Sugar Cookie Dough:

  • 1 Cup Gluten-Free Baking Flour
  • ½ Cup Sorghum Flour
  • ½ Cup Granulated Erythritol (or preferred granulated sugar)
  • ½ Tsp Baking Powder
  • ½ Tsp Cinnamon
  • ½ Tsp Ground Ginger
  • ¼ Tsp Ground Nutmeg
  • ½ Tsp Pure Madagascar Bourbon Vanilla Extract
  • 2 TB Vegan/Soy-Free Butter (cold, diced)
  • 4 TB Carrot Puree (plus 1 to 2 teaspoons extra if needed)

Icing and Decorations:

  • 1 Bag of Allergy-Free White Chocolate
  • Red, Yellow, Green Natural Food Dye
  • Green Sanding Sugar

Instructions

For the cut-out carrot sugar cookies:

  1. Mix together all the dry cookie dough ingredients, then using your hands, work in the cold and diced vegan butter and vanilla. Add the 4 tablespons of carrot puree and knead the dough again with you hands, adding an extra teaspoon only if needed. You want the dough just moist enough for easy rolling.
  2. Chill the dough for atleast 30 minutes to 1 hour and preheat the oven to 350°F in the meantime.
  3. On a floured flat surface, rolling the chilled dough out to about ⅛-inch thickness. Sprinkle extra flour on the dough when rolling, if needed.
  4. Cut our as many carrot-shaped cookies as you can with the dough, re-rolling as needed. I got 14 cookies using this cookie cutter.
  5. Evenly space the cookies out on a Silpat or parchment paper lined baking sheet and bake the cookies for 13-15 minutes in the preheated oven.
  6. Remove and let the cookies cool completely on a wire rack.

To decorate the baked cookies:

  1. Melt the allergy-free white chocolate in a wide bowl in the microwave, using 20-second increments, stirring between, until melted so it doesn’t burn. Celiac Disease is NOT a food allergy 🚫🍞 So Celiac Disease is NOT a food allergy 🚫🍞

So many people still confuse the two, but it’s an autoimmune disease, not an allergy. That means gluten doesn’t cause an immediate allergic reaction resulting in hives or swelling…it causes your immune system to attack your small intestine longterm. 

This distinction matters because:

👉 The only treatment is a strict, lifelong gluten-free diet
