Nothing says "basic" like a good 'ole pumpkin mug cake! Pumpkin season calls for using the squash for just about everything. We all end up with more than enough cans (fresh if you're dedicated) stocked in our pantries and the only way to get through it all is using it every chance we get. Mug cakes are the perfect and easiest ways to get in a little pumpkin. Best part? It will only take you 60 seconds!
How to make a pumpkin mug cake
Your own personal pumpkin cake in a mug, ramekin, any microwavable little dish! Easy and simple; you only need a few ingredients!
- Gluten-Free All-Purpose Flour
- PUMPKIN
- Milled Flax Seed
- Baking Powder
- Non-Dairy Milk
- Vanilla Extract
- Pumpkin Pie Spice
- Sweetener of Choice
First, you must grease your mug or ramekin well! No cake stuck to the sides and easy cleanup! Mix all the ingredients together. I like to mix everything in a separate bowl (so the main mug doesn't get messy for #foodblog photos), but you can mix everything right in the mug you'll be microwaving your mug cake in!
Pop your mixed pumpkin cake in the microwave and cook for 60 seconds! In the span of 1 minute, right before your eyes, you'll have a delicious single-serve pumpkin cake!
Can you use different flour?
Any type of gluten-free grain-based flour works. If you opt for a nut flour or coconut, the measurements will be off in terms of pumpkin, liquid, and binding ingredient needed.
Pumpkin Pie in a Mug
To make this gluten-free pumpkin mug cake more like a personal pumpkin pie, it's all about how you top it! If you know me, I'm a fan of the crustless pumpkin pie, but to give this mug cake a little more pie character, I crumbled up some gluten-free Nilla Wafers to sprinkle on top like a "pie crust". You have more options to make this as "pie-like" as you want:

Ingredients
- ¼ Cup Gluten-Free All-Purpose Flour*
- 2 Tsp Graulated Erythritol (or sweetener of choice)
- 1 Tsp Milled Flax Seed
- ½ Tsp Baking Powder
- ½ Tsp Pumpkin Pie Spice
- 2 TB Pure Pumpkin Puree
- 2-3 TB Unsweetened Non-Dairy Milk**
- ¼ Tsp Pure Madagascar Bourbon Vanilla Extract
Instructions
- In a seperate bowl or a greased microwave safe mug, ramekin, or bowl, mix together the dry ingredients (the first 5 ingreindts listed).
- Now add the pumpkin, vanilla, and non-dairy milk. Gradulaly add the milk tablespoon by tablespoon so you have a thick, cake batter texture.
- Microwave the cake on full power for 60 seconds. Add 10 second increments if 60 seconds isn't sufficient for the power of your microwave.
- Carefully remove the hot mug cake and top it to your liking.
Notes
*If you want a bit more heft to your mug cake, you can use ⅓ cup of flour (I typically do this when making mug cakes). You can also use a different gluten-free grain-based flour.
**If using ⅓ cup flour, use 3 TB of liquid. You can also use water instead of non-dairy milk.
